العائلة: البقولية (Leguminocea)
هو نبات حولي ينتمي للعائلة البقولية تم تصنيفه كشجيرة ونبات عشبي وعشبة ضارة . في غرب السودان يسمى الكول وفي شرقه يسمى سوريب أو سوريب عفن (Sorib) وهو يتواجد بكثرة في امريكيا وافريقيا وآسيا.
هو نبات أوراقه مركبة تتكون من ثلاثة أزواج من الوريقات ذات شكل بيضاوي.أزهاره صفراء إلى برتقالية اللون وقد يصل طول سيقانه إلى 2 متر.زوج الوريقات اصغر من زوج الوريقات العلوية. وأوراقه حساسة للضوءPhotosensitive.
تستخدم بذور الكول لعلاج الايرقان وتستخدمه قبيله (…) في شمال دارفور بعد غلي البذور كشاي لعلاج الصداع وآلام المعدة والارهاق والامراض الغير معروفة.يمكن استخدام الصمغ المستخرج من البذور في الصناعات الغذائية والصيدلانية وصناعة الأوراق والأعلاف.
يستخدم النبات كمصدات للرياح في منطقة جبال النوبة لنباتات الذرة الرفيعة والدخن نسبة لطول سيقانه وقوتها. يستخدمه البعض كبديل للقهوة بعد تحميصه . يستخدمه الصينيون كعلاج لاحمرار العيون والصداع.تستخدم البذور بعد خلطها مع التربة بنسبة 5% لتقليل نسبة النيماتودا في الأرض لذلك يمكن استخدامها كمبيد للنيماتودا.تستخدم سيقان الكول التي قد يصل طولها إلى 2 متر في بناء الأكواخ أو كوقود.
يتم تخمير أوراق الكول لا هوائياً في السودان لينتج الكول المتخمر الذي يستخدم في الملاح بكميات متباينة على حسب رغبة المستهلك. يستخدم الكول كمادة بديلة للحم بواسطة الفقراء حيث يستخدم بكميات كبيرة . ويستخدمه البعض كتابل حيث يضاف بكميات ضئيلة كالشطة مع الملاح الذي يؤكل مع العصيدة.تم اختراع الكول بواسطة قبيلة الفور بغرب السودان . لا يحب الأغنياء تناول الكول نسبة لرائحته الكريهة التي لاتخرج من الأصابع ويعتبره البعض غذاء للفقراء. ينتشر تناول الكول في كل بقاع السودان نسبة لارتفاع أسعار اللحوم ولهجرة المواطنين من غرب السودان الى شرقه.في زمن المجاعة التي أصابت السودان في الثمانينات منع تناول الكول وعصيره إصابة الأطفال بمرض الكواشيركور.
أهم الميكروبات الموجودة في الكول أثناء تخميره هي:
Bacillus subtilis تليه Propionibacterium spp وفطر Rizopus Spp
تتراوح نسبة البروتين في الأوراق قبل التخمير بين 21-27.8 % ، الرماد 10-13%، الدهون 2- 4.8% ,الألياف 13-13.9 % ، الرطوبة 6.5- 14.7 % والكربوهيدرات 28-59% والطاقة 248-268%، التانين 453-2500 ملجم/100جم ، الفينولات العديدة 1008-4770 ملجم/100جم. الفايتك 310-649% .معدل هضم البروتين بإستخدام انزيم الببسين فقط 39%. الكالسيوم2933 -3006 ملجم/100جم ،البوتاسيوم 1924-1703ملجم/100جم الماغنسيوم 357-388 ملجم/100 جم , الفسفور 380-414 ملجم/100 ، الحديد32-41 ملجم/100 جم
الكول بعد التخمير تتراوح نسبة البروتين في الأوراق بعد التخمير بين 26 -35% ، الرماد 18- 19.6%، الدهون 3.32 -4.6 % ,الألياف 12.1-12.9 % ، الرطوبة 7.5- 9.3 % والكربوهيدرات 18.75 – 22.68% والطاقة 232.88 – 225.10 كيلو كالوري %، التانين 981- 1504ملجم/100جم ، الفينولات العديدة 814- 981 ملجم/100جم. الفايتك 166-649 ملجم/100 جم .معدل هضم البروتين بإستخدام انزيم الببسين فقط 58 %، الكالسيوم 2.86 – 5.973 جم/100جم ، البوتاسيوم 2.260- 2.054جم/100 جم , الفسفور 593- 733 ملجم/100 ، الحديد 48-61 ملجم/100 جم.
تحتوي أوراق الكول قبل التخمير على قيم أعلى من البروتين المرجعي للفاو .مجموع قيم الأحماض الكبريتية السستين والميثايونين تساوي قيمة البروتين المرجعي للفاو (3.5 جم/ 16جرام نتروجين. يحتوي على 7.7 جم/ 16 جم نتروجين من اللايسين وهي أعلى من قيمة قيمة البروتين المرجعي للفاو 5.5 جم/16 جم نتروجين.الأحماض الأمينية المتفرعة الليوسين والآيزوليوسين والفالين بعد التخمير لم تنقص كثيراً بعد التخمير مقارنة بالأحماض الأمينية الغير أساسية كحمضي الأسبارتيك والقلوتاميك.حدث أيضاً نقصان في قيمتي السستسن والميثايونين بعد التخمير لكنه لم يكون كبيراً بحيث يجعله من الأحماض المحدودة أيضاً هنالك نقصان في حمضي اللايسين والثريونين بعد التخمير. الحمض الأميني المحدود في الكول بعد التخمير هو اللايسين بقيمة تعادل 73%.
كيفية تجهيز الكول:
أولاً يتم تجهيز إناء التخمير (زير)كالآتي:
يتم مسح إناء التخمير من الداخل بنوع من الطين من نفس نوع الطين الذي تم به تصنيع إناء التخمير.ثم يتم مسحه من الداخل بطبقة من مادة لزجة عادة نبات الباميا واحياناً يستخدم نبات بري يسمى أباديب (Abadeib) حتى لا يختلط نبات الكول مع التراب.ثم يتم دفن إناء التخمير في منطقة باردة حتى عنق الإناء.
ثانياً: يتم تنظيف أوراق الكول من السيقان والبذور والأزهار والمواد الغريبة ويتم دق الأوراق مع مراعاةعدم فقد العصيرثم يتم وضع العجينة في إناء التخميروتغطى بأوراق الذرة الرفيعة ثم يتم وضع حجارة تم غسلها جيداً أعلى أوراق الذرة لتقوم بضغط العجينة للأسفل. ثم يغطى فم الإناء بصينية معدنية أو طبق معدني ثم يتم اغلاق فم الإناء والغطاء المعدني بالطين لمنع دخول الحشرات إلى إناء التخمير. كل ثلاثة أيام يتم خلط المكونات داخل الإناء جيداً باليد وتغطى بأوراق ذرة رفيعة جديدة وبعد 14 يوم يتكون الكول (مادة سوداء ذات رائحة قوية) ويتم تشكيل العجينة في شكل كور صغيرة وتوضع في الشمس لمدة تتراوح بين 3-4 أيام حتى يجف ولونه تقريباُ اسود
للاستفادة من الكول غذائيا يجب تناول كميات كبيرة منه ولكن نسبة لأن بعض الدراسات أثبتت سمية البذور والأوراق يجب إجراء بحوث للسمية بعد التخمير للتأكد من سلامته للانسان وعدم تأثيره سلبياً عليه
